Madeleine Philippe has an excellent website featuring the food of Mauritius, which she calls “the most versatile cuisine in the world.” The influence of Chinese, French, Asian, and Indian cuisines can all be found here. Chinese-based recipes include Prawn Egg Foo Yung, Fried Rice made with prawns, Chinese sausage, and basmati rice, stir-fried Chinese vegetables, and an easy to make recipe for Chinese Nian Gao using only four ingredients. French-inspired dishes include Seafood Bouillabaise, Fish in Bechamel sauce, and French pastries, while the Indian and Southeast Asian influence comes through in recipes for curries and chutneys. A site well worth visiting.
