Bubble Tea

The latest fad in Asian drinks, bubble tea originated in Taiwan tea houses. Bubble tea’s unique combination of tea, milk, sugar, and fruit is cool and refreshing, and the chewy tapioca balls hidden at the bottom of the glass are an added treat. My recipe includes tips for preparing the tapioca pearls and sugar syrup.
