Rice That Sizzles

Rice is so important in southern China that people often greet each other by asking “Have you had your rice today?” So, it’s not surprising that even overcooked rice is put to good use! Crispy rice, also called sizzling rice, is the hardened layer that forms at the bottom of the pot. Many of us have accidentally made crispy rice at one time or another, but Chinese chefs prepare it deliberately to use in classic dishes such as Sizzling Rice Soup. The sizzle comes from the way the rice “crackles and sizzles” as it meets the heated broth. All About Sizzling Rice.
