Chinese Red Bean Soup

Sunday September 23, 2007
Red Bean Soup Sweet soups are a staple in Chinese cuisine, where along with savory soups they are served throughout the meal, or as a snack. Red bean soup is perfect for cold fall and winter days. Made with red azuki beans, dried tangerine peel and dried lotus seeds, it’s believed to be very yang or warming. (For the beauty-conscious, it’s also rumored to be great for getting rid of dark circles under the eyes!) This sweet soup can be served hot or cold.
