Easy Egg Fried Rice – Mama Choo Cha’s Egg Fried Rice

Submitted by a reader, this easy recipe makes a nice side dish on busy weeknights, or you can enhance it by adding chicken or shrimp. Like any fried rice recipe, egg fried rice works best with rice cooked at least one day ahead of time. But if you don’t have any on hand, a quick trick is to spread a batch of freshly cooked rice on a baking sheet and freeze for 25 to 30 minutes. The texture of the rice won’t be quite the same, but it makes a handy substitute.
