Easy Dan Dan Noodles

This wildly popular Szechuan dish gets its name from the shoulder poles that street hawkers used to carry their edible noodle dishes. There are almost as many different ways of preparing Dan Dan Noodles as there are Chinese chefs! Here is a quick and easy recipe, complete with photo instructions, that pairs the spicy sauce with dried pasta noodles. You can, of course, use dried Chinese noodles if desired.
