Perfect Peking Duck

Thursday January 1, 2009
It’s hard to believe, but a skilled Chinese chef can carve a cooked duck into 120 pieces in mere minutes. Learn more about Peking Duck, Beijing’s most famous dish, in this feature from guest writer Ronghe Yu. It includes a basic recipe for Peking Duck that you can make at home, along with a recipe for Mandarin Pancakes to serve with the duck, and instructions on making “Green Onion Brushes” to brush on the hoisin sauce.
