Beef Braised in Soy Sauce (Red Cooked Beef)

A technique used in Shanghai cooking and the surrounding eastern provinces, red cooking consists of braising meat, poultry or seafood in soy sauce. It’s perfect for colder weather days. This recipe for Beef Braised in Soy Sauce uses ingredients available in local supermarkets (with the exception of the dry sherry or Chinese rice wine). For something a little more authentic, this Red-Cooked Beef recipe is made with licorice flavored star anise and dried mushrooms and includes instructions for cooking the beef in either a wok or a clay pot.
