Low Fat (Almost) Fried Rice

What do you do with leftover cooked rice? I combined it with leftover ham from New Year’s Day to make Fried Rice with Ham. Using a non-stick frying pan for stir-frying turns this almost, but not quite, into a low fat dish according to these guidelines from About.com's Guide to Low Fat Cooking.
