(Ngao Yuk) comes from Evelyn Chau, who writes: "This is one of the very few beef dishes in Dim Sum, no doubt because pork is more plentiful than beef in China." The steaming dish is lined with fresh watercress, which soaks up the beef flavor during cooking.
