Red, White and Blue Tofu

A blend of red and blue berries and soft almond flavored tofu combine to make a quick and easy dessert that is perfect for Independence Day. Feel free to garnish the tofu with chocolate sprinkles, coconut flakes, toasted sesame seeds or your own favorite topping. If almond flavored soft tofu is unavailable, use regular soft tofu and stir in one teaspoon almond extract.
