Andrew Krauss at New York City's China 1 Antique Restaurant and Lounge came up with this fun twist on the traditional Bellini cocktail. He has replaced Peach Schnapps with Lychee Liquor to create a Beijing Bellini. A reader gives the drink an enthusiastic five out of five stars, calling it "very smooth, unusual, and a great hit."
