I was surprised recently to see this Easy Mapo Tofu recipe on a forum for Meals under $2. Keeping the cost under $2 takes some planning - the reader mentions she buys her seasonings in bulk and looks for pork in the marked down bin - but I was happy to see that she loves the dish and makes it at least once a week.
