Almond Cookie

Almond CookiesOne fun holiday tradition is a Christmas cookie exchange. If you're participating in a cookie exchange this year and are stuck for ideas, Chinese almond cookies are a great choice. Almond cookies are easy to make and very addictive! For an extra touch, replace the almond slice in the middle with a dash of red food coloring (red symbolizes happiness in Chinese culture). Or, you can even paint on the Chinese character for moon.
