Bland but healthy - that's how many people think of chicken noodle soup. But there is nothing bland about the Vietnamese take on this old standby. Pho Ga consists of a nourishing homemade chicken broth spiced up with Asian seasonings such as star anise, with blackened ginger, garlic and onion giving a wicked smoky kick to the broth. For noodles, you can use either dried pho noodles (available at Chinese/Asian markets) or fresh rice noodles, which can be found in the international section of larger groceries.
