Maintaining your cleaver with a good sharpening steel will make cutting easier and help prevent accidents.
Difficulty: Average
Time Required: 5 minutes
Here's How:
- Get a firm grip on the handle of the sharpening steel.
- Place the cleaver against the steel with the blade facing down, and the edge of the blade that is closest to the handle positioned against the steel. The angle between the cleaver and the steel should be about twenty degrees.
- Pull the blade down and across the sharpening steel in a small arc.
- Place the blade on the other side of the sharpening steel and repeat.
- Repeat on each side between six to ten times, always alternating sides.
Tips:
- The sharpening steel should have a higher hardness factor than the cleaver. Otherwise you won't be able to maintain a sharp cutting edge and you run the risk of damaging the sharpening steel.
