By Rhonda Parkinson, About.com

The tangy flavor of fresh ginger is ubiquitous in Chinese cooking. Here are basic steps for shredding and mincing ginger.
Difficulty: Easy
Time Required: 5 minutes

Here's How:

  1. Peel a piece of fresh ginger.
  2. Cut off the small protuberances or knobby parts.
  3. Cut the ginger horizontally into thin slices.
  4. Stack the pieces and cut across in the opposite direction into thin shreds.
  5. To mince, simply continue chopping the ginger, first in one direction and then the other, into fine bits.
