Seasoning oil with ginger removes the raw smell of the oil. Seasoned oil can be stored and re-used - dishes often have more flavor if they are cooked in oil that has been used previously.
Difficulty: N/A
Time Required: 15 minutes
Here's How:
- Heat wok on high heat.
- Pour approximately 2 cups of vegetable oil into the wok.
- Add a couple of slices of ginger, or one slice ginger and one sprig of scallion if desired.
- Wait until the ginger rises to the top and turns dark brown (about 5 minutes).
- Turn off the heat and let the oil cool.
- Store in a sealed container.
- Use in wok cooking as needed.
Tips:
- If you want to remove cooking odors from previously seasoned oil, simply add ginger to the oil and repeat the above steps.
- Discard the seasoned oil if it becomes rancid.
- Certain dishes, such as desserts, taste best with fresh and not previously seasoned oil.
