Season Vegetable Oil With Ginger

Seasoning oil with ginger removes the raw smell of the oil. Seasoned oil can be stored and re-used - dishes often have more flavor if they are cooked in oil that has been used previously.
Time Required: 15 minutes

Here's How:

  1. Heat wok on high heat.
  2. Pour approximately 2 cups of vegetable oil into the wok.
  3. Add a couple of slices of ginger, or one slice ginger and one sprig of scallion if desired.
  4. Wait until the ginger rises to the top and turns dark brown (about 5 minutes).
  5. Turn off the heat and let the oil cool.
  6. Store in a sealed container.
  7. Use in wok cooking as needed.

Tips:

  1. If you want to remove cooking odors from previously seasoned oil, simply add ginger to the oil and repeat the above steps.
  2. Discard the seasoned oil if it becomes rancid.
  3. Certain dishes, such as desserts, taste best with fresh and not previously seasoned oil.
