Answer: b. Despite the fact that sui choy is also called Chinese or Peking cabbage, and another name for bok choy is Chinese white cabbage, the two vegetables are quite different. Sui choy is more tender, taking longer to cook than bok choy as it has more moisture. Broccoli has a texture that is more similar to bok choy.
