From chopstick users...

Somehow eating Chinese food with a fork just doesn't seem right especially when you're in a restaurant. I always felt that using a fork would be insulting to the Chinese culture.

Just like pizza or a chicken drumstick tastes better when eaten by hand.

When in Rome...

Believe it or not (and this only happens with Chinese food), nothing seems to stay on the fork.

Chopsticks pick up the ideal proportion of solid to liquid in the dish. Western cutlery tends to pick up more liquid than the cooking of the dish intended - and in fact tends to pick up too much food for the proper mouthful altogether.

Great if you're on a diet because it takes longer to eat - and you expend all those extra calories just getting the food to your mouth!

With much trepidation I begin my meal and by the desert dish I'm showing off my remembered skills, learned in 9 years spent between Okinawa, Taiwan, Vietnam, and Korea.

Depends, if the table is set with bowls I use chopsticks, if the table is set with plates, I use regular cutlery. It's easier to eat with chopsticks with a bowl so you can catch whatever falls!

And from those who prefer cutlery...

I can work the stick pretty well, but I love the food so much, it just makes more sense to use a fork to get every last bit.

Trying to use chopsticks makes me angry and impatient. I like to push the rice onto a fork with my left thumb, no matter how uncouth this sounds.

Chinese food from take-out is often difficult to eat as most of it is made for Americans to eat with utensils. Certain dishes I will eat with chopsticks, but it all depends.
