Review Continued: I have been in many Chinese kitchens including those in Taiwan, Hong Kong, Thailand, and Vietnam and Yus is about as good as they come. The kitchen is like a beehive, and each person has a specific role that is executed like clockwork. And because it is open to public scrutiny, it is very orderly and clean. Another treat is that every Friday evening, their Noodle chef comes out and demonstrates how to make noodles the old fashioned way--by taking a glob of raw dough, stretching it then folding it back over and repeating the process until the dough forms thin, individual strands of noodle.
