TRIVIA QUESTION: I am commonly called "meat without bones." Instead of asserting myself, I take on the characteristics of those around me. This may make me sound rather soft, but I can be firm as well. What am I?

TRIVIA ANSWER: Bean Curd. Known in China as Doufu, and in Japan as tofu, it has been a staple in Chinese cooking since the Han dynasty (206 BC - 220 AD). Regular tofu comes in a variety of textures, ranging from soft to extra-firm. Firm tofus are the best choice for stir-frying - they hold their shape better while being stirred and tossed in the pan.
