How to Shred Food

Many Chinese recipes call for shredded meat or vegetables. The technique is quite simple.  

Difficulty Level: Average        Time Required: 5 minutes


Here's How:

  1. Grasp the cleaver firmly by the handle, placing your thumb on one side of the blade, and your second and third fingers on the other side.
  2. For meat: slice the meat against the grain into pieces approximately 2 inches wide.
  3. Pile the pieces on top of each other.
  4. Cutting along the grain this time, cut the meat  into thin strips.
  5. For root vegetables like carrots: cut the vegetable diagonally into thin slices.
  6. Stack the slices and cut lengthwise.

Tips:

  1. Partially frozen meat is easier to shred.
