Shredded Pork with Peking Sauce or Hot Bean Paste
Makes 20
Ingredients:
220 grams pork (approximately 8 ounces)
110 grams (approximately 4 ounces) shredded cabbage or lettuce
3 tablespoons Peking sauce* or 1 tablespoon Hot Bean Paste
2 tablespoons cooking oil
2 tablespoons soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
Shred the pork: cut into thin slices, then stack them up one
on top of the other, and cut across into shreds.
Add soy sauce, salt, and pepper to the pork and marinate for at least 10 minutes. While
the pork is marinading, shred the cabbage and put it on a plate.
Heat wok and add 2 tablespoons of cooking oil. When oil is ready, add the shredded pork
and stir-fry until it is 90 percent cooked. Add the Peking sauce or hot bean paste and mix
evenly. Pour onto the cabbage or lettuce and serve hot.
*Peking sauce is available in Asian markets.
