Thai Basil and Sweet Corn


Serves 2 

Ingredients: 
4 cloves garlic coarsely chopped
2 small chilies
2 tablespoons cilantro stems
2 tablespoons fish sauce or soy sauce as desired
2 cups corn kernels (if using frozen corn, defrost first)
1 tablespoon brown sugar
1/2 cup Thai basil leaves 

Oil for stir-frying

(Thai basil has a licorice or anise flavor.  It can be found at Asian markets).   

Directions: Use a mortar and pestle to pound together the chilies, garlic, cilantro, and soy sauce. Set aside. 
Heat wok and add oil for stir-frying. When oil is ready, fry the garlic/chilie/cilantro paste mixture on high heat for between 30 seconds to a minute, stirring constantly. Add the corn and brown sugar. Stir-fry until the corn is warm, then add the basil at the last minute, being sure not to overcook.
