While most mangoes turn yellowish-red or golden yellow when ripe, some remain completely green.  There are hundreds of varieties of mangoes in the world, some as small as a plum while others are as large as a coconut and weigh several pounds.  One tip: whichever mango you purchase, be sure not to eat the skin, which has a taste similar to turpentine.  Mangoes are thought to have originated in India, where they took on a religious significance.  In Chinese cuisine, Mango Pudding is a popular dim sum dessert, while the sweet flavor of sliced mango combines well with meat in stir-fries.
