word tagine refers specifically to the dish the stew is cooked in, a type of
earthenware cooker with a pointed top. (A Dutch oven can be used instead).
Tagine dishes consist of meat slowly simmered with vegetables, spices and often
fruit (such as lemon and pears). Most commonly made with lamb, chicken is also
used, and vegetarian tagine recipes (substituting beans for the meat) are
becoming quite popular. Tagine dishes can be savory or sweet, depending on the
ingredients used.
