Lychees are native to China, and have long been valued by successions of Chinese emperors for their sweetness. According to legend, when courtiers first stumbled upon the lychee, they thought the fruit was so delicious that they rushed back in triumph to present their find to Emperor Han.
Lychees are available fresh during the summer months, and canned throughout the year. Inside the lychee is sweet flesh surrounding a dark seed. Lychees are enjoyed raw and used in desserts. They make a nice addition to a fruit salad and are used in ice creams. Nutritionally, lychees are an excellent source of potassium and a good source of Vitamin C. They are thought to aid digestion.
