Series)
This book tries and succeeds in taking the mystery out of dim sum
cooking. The first thing that struck me was the number of photographs
illustrating basic cooking methods such as steaming and making dumplings
- techniques you need to master to make dim sum dishes. Looking
further, I saw most of the recipes are traditional classics such as
Steamed Buns, Barbecued Pork, Custard Tarts and Mango Pudding.
There are many dim sum cookbooks that feature fusion dishes or modern
variations on traditional recipes. That's fine, but a book that sticks to the basics and makes them easy to
understand is a must-have for any cook's bookshelf.
