Stir-fry Beef Recipe

Oyster sauce adds flavor to this simple stir-fry beef recipe with snow peas.

Ingredients:

  • 1 pound sirloin or round steak
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon granulated sugar
  • 1 tablespoon cornstarch
  • 3 tablespoons oil for stir-frying, or as needed
  • 2 thin slices fresh ginger
  • 8 ounces (about 2 cups) fresh snow peas
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon Chinese rice wine or dry sherry
  • 1 teaspoon dark soy sauce, or to taste

Preparation:

Cut the beef across the grain into thin strips about 1 1/2 inches long. Place in a bowl and stir in the light soy sauce, oyster sauce, sugar, and cornstarch. Let stand while preparing the other ingredients.

Heat wok and add 2 tablespoons oil. When oil is hot, add half the beef. Stir-fry the beef until it is nearly cooked. Remove and stir-fry the remainder of the beef.

Heat 1 tablespoon oil in the wok. Add the ginger and cook for about 30 seconds, until fragrant. Add the snow peas, sprinkling with salt. Stir-fry for about 2 minutes, until they turn bright green, stirring in the rice wine or sherry while stir-frying. Remove the ginger slices.

Add the beef back into the pan. Stir in the dark soy sauce. Taste and adjust seasoning as desired. Heat through and serve hot.
