This book is an excellent choice for cooks who enjoy dim sum and want to learn how to prepare some of the more basic dishes at home. The first thing that struck me when I opened the book was the number of photographs illustrating basic cooking methods such as steaming and making dumplings - techniques you need to master for dim sum cooking. Most of the book's recipes are for traditional classics such as Steamed Buns, Barbecued Pork, Custard Tarts and Mango Pudding. There are many dim sum cookbooks that feature fusion dishes or modern variations on traditional recipes. That's fine, but a book that sticks to the basics and makes them easy to understand is a must-have for any cook's bookshelf.
