A member of the Soapberry family, sweet lychees make a great choice for smoothie recipes, while a splash of lime adds zip. This tofu smoothie recipe uses soft tofu.

Ingredients:
- 6 ounces soft tofu, removed from package, excess water drained
- 1 medium banana, peeled and cut into slices
- 20 canned lychees
- 2/3 cup canned lychee juice
- 1/2 cup coconut milk (I used Blue Orchid brand)(Note: shake the can before opening and stir before using)
- 2 teaspoons lime juice
- 4 ice cubes, or to taste
Preparation:
Spread the sliced banana on a baking sheet. Freeze for at least 15 minutes (this helps thicken the smoothie).
Combine all the ingredients in a blender and blend until smooth. Serves 2. Makes about 4 cups.
