Berry Tofu Smoothie - Tofu Smoothie Recipe

A member of the Soapberry family, sweet lychees make a great choice for smoothie recipes, while a splash of lime adds zip. This tofu smoothie recipe uses soft tofu.

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: Serves 2

Ingredients:

  • 6 ounces soft tofu, removed from package, excess water drained
  • 1 medium banana, peeled and cut into slices
  • 20 canned lychees
  • 2/3 cup canned lychee juice
  • 1/2 cup coconut milk (I used Blue Orchid brand)(Note: shake the can before opening and stir before using)
  • 2 teaspoons lime juice
  • 4 ice cubes, or to taste

Preparation:

Spread the sliced banana on a baking sheet. Freeze for at least 15 minutes (this helps thicken the smoothie).

Combine all the ingredients in a blender and blend until smooth. Serves 2. Makes about 4 cups.
