Almond Dofu

Serves 6 to 8.

Ingredients:

  • 1/4 ounce (about 8 heaping tablespoons) agar agar
  • 2 cups water
  • 3 tablespoons soft brown sugar
  • 1 cup evaporated milk
  • 2 teaspoons almond extract
  • canned fruit cocktail or fresh fruit as desired.

Preparation:

In a medium saucepan, bring the water and agar agar to a boil. Turn down the heat and simmer, stirring occasionally, until the agar agar is dissolved.

Dissolve the sugar in the simmering water. Stir in the evaporated milk. Remove from the heat and stir in the almond extract.

Pour into an 8 or 9-inch square pan. Chill until firm. Cut into squares or diamonds as desired. Serve with the fruit.

the proportions of agar are way off!, Member sweetheart2229

I tried this recipe & the agar proportions seem to be way off. The agar flakes I used (Eden brand) take about 1 tablespoon of flakes to 1-1/2 to 2 cups of liquid for standard almond dofu. This recipes came out much, much too thick!
