Peach Mandarin Smoothie

Juicy and sweet, peaches are a great choice for smoothies. Fortified with soy milk, this refreshing smoothie is perfect for breakfast or as a cool down on hot summer days.

Ingredients:

  • 2 peaches, peeled, sliced and unseeded
  • 1 banana, peeled and sliced
  • 1/2 cup fat-free plain yogurt
  • 1/4 cup soy milk (soy beverage)
  • 1/2 cup juice from canned mandarin oranges
  • 7-8 canned mandarin orange slices, rinsed

Preparation:

Spread the sliced banana and peach out on a baking sheet. Freeze for at least 15 minutes.

Combine all the ingredients in a blender and blend until smooth. Serves 1 - 2.

I adore smoothies - great for breakfast and good too for a light meal when you're not up to cooking and don't want a hot supper or a salad. I like to add almond essence to peaches but true vanilla essence is good too. I feel the recipe needs flavouring to blend its flavours well. If you want to cut back on calories, substitute one to two sweet oranges, peeled and pith removed. Blend in place of mandarin oranges. Let's have more smoothie ideas, so good at all times of the year.
