Deep-fry - Glossary of Chinese Ingredients and Cooking Terms

Definition: To deep-fry is to make sure the food is completely submerged in hot oil during cooking. Along with stir-frying and steaming, it is one of the three major Chinese cooking techniques. The objective in deep-frying is to brown the outside of the food, but not so fast that the inside is not thoroughly cooked.

A wok is normally used for deep-frying Chinese food, although if you prefer you can use a deep-fat fryer instead. Kung Pao Chicken, a popular Szechuan dish made with diced chicken, peanuts, and red chili peppers, is a classic deep-fry dish.
