Definition: Stir-frying is the most popular Chinese cooking technique, primarily because it is quick and doesn't use much oil, which is a plus for dieters. To stir-fry, ingredients are added to a heated pan and moved continually during cooking. Although food is normally stir-fried in a wok, a frying pan can be used instead.
