Thick Soy Sauce - Glossary of Chinese Ingredients and Cooking Terms

Definition: A thicker, sweeter version of soy sauce, made by adding extra wheat during the fermentation process, and molasses and sugar in later stages. Thick soy sauce is used to add color and heighten flavor; restaurants frequently use it in fried rice dishes.
