XO Sauce - Glossary of Chinese Ingredients and Cooking Terms

Definition: XO sauce is a flavor-packed sauce made with dried shrimp and scallops and spicy seasonings, including chile and garlic. The exact origins of XO Sauce are unknown, although it is said to have originated in Hong Kong, where it is served as a table condiment at higher-end restaurants. In cooking, XO sauce is used in stir-fries, particularly seafood dishes. XO sauce is available at Asian supermarkets and the ethnic or international section of some groceries. Lee Kum Kee sells a brand of XO Sauce (the cost approximately $10 US per bottle), or you can make your own.
