1. Add the ground pork. Cook, stirring, until the pork is thoroughly cooked through (8 to 10 minutes). Splash the ground pork with the rice wine or sherry while it is cooking, and use a spatula to break it up.
2. Stir in the Szechuan preserved vegetable and cook, stirring briefly until it is hot (about 30 seconds).
3. Re-stir the sauce ingredients and add, stirring into the meat mixture.
4. Add the chicken broth. Bring to a boil, turn down the heat and simmer for 2 to 3 minutes.
