Five-spice powder adds a kick to this easy recipe for spiced nuts made with walnut halves.

Ingredients:

  • 1 cup granulated sugar
  • 2 teaspoons five-spice powder
  • 1/4 teaspoon salt
  • 1 large egg white
  • 4 teaspoons orange juice
  • 12 ounces walnut halves

Preparation:

Preheat oven to 250 degrees Fahrenheit (approximately 120 degrees Celsius). Spray a 9 X 13 inch baking sheet with non-stick cooking spray.

In medium bowl, stir together sugar, five-spice powder, and salt. In another medium bowl, beat the egg white and orange juice with a wire whisk until frothy.

Slowly stir sugar into the egg white mixture, about 2 tablespoons at a time. Fold in the walnuts, stirring to mix thoroughly in the sugar mixture.

Spread the walnuts onto the baking sheet. Bake for 30 minutes, stirring occasionally. Cool thoroughly.

Just thought I'd say that this recipe is super-simple and very tasty. I've used it twice this week (Christmas holidays) and guests love it. Another nice thing about this recipe is that it's open to interpretation; for example, if one were to mix the 5-spice with, say, galangal, the recipe would easily accommodate this. It's very important to grease the pan prior to inserting, otherwise the egg white/sugar mix will be very difficult to remove. That said, a non-stick spray isn't totally necessary - butter will do.
