Stir-fry Pork Chops With Sweet Red Bean Paste

Made with azuki (adzuki) beans, sweet red bean paste nicely complements pork. Sweet red bean paste is available in Chinese supermarkets, or you can make your own.

Prep Time: 30 minutes

Cook Time: 7 minutes

Ingredients:

  • 4 boneless pork chops 
  • Marinade:
  • 4 teaspoons light soy sauce
  • 1 spring onion (green onion, scallion)
  • 1 teaspoon sesame oil
  • Sauce:
  • 1/3 cup red bean paste
  • 2 tablespoons sugar
  • 2 tablespoons Chinese rice wine or dry sherry
  • 4 tablespoons water
  • Remaining Ingredients:
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 garlic clove
  • 2 tablespoons oil for stir-frying

Preparation:

Cut the pork chops into thin strips about 2-inches long. Add the soy sauce, spring onion and sesame oil. Marinate the pork for 30 minutes.
   While the pork is marinating, prepare the remaining ingredients. In a small bowl, combine the red bean paste, sugar, rice wine or dry sherry and 4 tablespoons water. Set aside. In another small bowl, combine the cornstarch with 2 tablespoons of the water and set aside. Smash, peel and chop the garlic.
Heat a wok or frying pan and add the oil. When the [link oil is hot, add the garlic and stir-fry until aromatic. Add the pork and stir-fry until it changes color and is nearly cooked. Add the red bean paste sauce into the middle of the pan.
Turn up the heat and stir in the cornstarch and water mixture. Mix everything together and cook until heated through. Serve hot with rice or noodles.
