Cilantro Chicken

Cilantro chicken - These tasty chicken wings get their flavor from fresh cilantro, a popular herb in Chinese and Asian cooking.

Ingredients:

  • 8 chicken wings
  • 2 tablespoons cooking oil
  • 4 garlic cloves, crushed
  • 1/2 medium red onion, chopped
  • 3 Serrano peppers, chopped if desired
  • 4 tablespoons Soy sauce*
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon crushed peppercorns
  • 1 teaspoon Sugar
  • 1 can chicken stock (about 1 3/4 cup)
  • 2 bunches of fresh cilantro leaves (also called Chinese parsley, fresh coriander)

Preparation:

Cut the chicken wings into bite size pieces.

In a frying pan or preheated wok, heat oil until very hot, then add garlic and cook until golden brown. Add the chicken and keep stirring until the skin is slightly cooked. Add the onion and hot Serrano peppers.

Then mix soy sauce, sea salt, crushed peppercorns, sugar, and add into the pan. Add the chicken stock.

Turn the heat to low and let cook for 20 minutes. Add the chopped cilantro, let cook for 1 minute, then turn off the heat and let it sit for 5 minutes. Serve with steamed rice.
