Salt and Pepper Mix

This spicy salt can be used as a table condiment or as a dip.

Cook Time: 10 minutes

Ingredients:

  • 1 tablespoon Szechuan peppercorns
  • 3 tablespoons sea salt

Preparation:

Heat the ingredients in a heavy frying pan over medium-low heat, shaking the pan occasionally, until whisps of smoke appear and the Szechuan peppercorns become fragrant (about 10 minutes).

Remove the pan from the burner and allow the mix to cool. When cooled, process in a blender or food processor, grind the mixture with a mortar and pestle, or you can crush it with a rolling pin. Use immediately, or stored in a covered jar at room temperature.
