Sweet and Sour Fish Sauce

By Rhonda Parkinson, About.com

Fish sauce is as ubiquitous to Vietnamese cuisine as salt is to western cuisine and soy sauce is to Chinese cooking. Here it is seasoned with other ingredients to give a sweet and sour flavor.

Prep Time: 5 minutes

Ingredients:

  • 3 garlic cloves
  • 1 cup water
  • 4 tablespoons lime juice
  • 4 tablespoons granulated sugar
  • 2/3 cup fish sauce
  • 1/2 - 1 teaspoon red chili paste, as desired
  • Thinly sliced carrot, optional

Preparation:

Finely mince the garlic. In a small bowl, combine all the ingredients until the sugar dissolves. Yields about 2 cups.
