Stir-fried Spinach Wtih Ginger and Almonds in Miso Dressing

Serves 2 to 4

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

  • 2 tablespoons soy sauce
  • 1 tablespoon miso
  • 1 teaspoon rice vinegar
  • 2 pounds fresh spinach, washed, trimmed, and cut in 1-inch pieces
  • 2 tablespoons sliced almonds
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground ginger

Preparation:

Combine soy sauce, miso, and vinegar until smooth. Set aside.

Heat wok over high heat. Add almonds and stir-fry quickly until fragrant and toasted, about 45 seconds. Remove.

Add sesame oil to wok and heat. Add spinach and ginger and stir-fry until tender, about 3 minutes.

Drizzle with miso dressing and sprinkle with almonds. Serve immediately.
